  • 110.6 g ground lamb
  • 2 tbsp za'atar spice blend
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 95.9 g wild rice blend
  • 15.5 g fresh cilantro
  • 186.4 g tuscan kale
  • 0.6444 tsp olive oil
  • 1 tsp lemon juice
Method
  1. 01Rinse the wild rice blend under cold water until clear. Combine in a small pot with water and a pinch of salt. Bring to a boil, reduce heat, cover, and simmer for 18 minutes until tender and fluffy.
  2. 02In a bowl, combine the ground lamb, half of the za'atar spice blend, salt, and black pepper. Mix thoroughly and shape into four elongated koftas.
  3. 03Heat olive oil in a skillet over medium-high heat. Add the lamb koftas and cook for 4-5 minutes per side until deeply browned and an internal temperature reaches 160°F (71°C) for safe consumption of ground meat. Remove koftas and set aside to rest.
  4. 04In the same skillet with rendered fat, add the chopped Tuscan kale and sauté for 3-4 minutes until leaves are bright green and tender.
  5. 05Fluff the cooked rice with a fork and stir in the chopped fresh cilantro.
  6. 06Plate the herbed wild rice, top with the wilted kale, and nestle the za'atar-crusted lamb koftas on top. Finish with the remaining za'atar dusting and fresh lemon juice.
