- 12.7 g Halloumi cheese, sliced
- 39.8 g Carrots, finely shredded
- 17.9 g Serrano chile, finely minced
- 58.1 g Watermelon, cubed as side

Method
- 01Place a dry, heavy-bottomed skillet over medium heat. Add the halloumi slices and sear until deeply golden brown, about 2 minutes per side; the cheese should smell toasted and slightly salty. Remove the halloumi and set aside.
- 02In the same pan, add the finely shredded carrots and minced serrano chile. Toss for 2-3 minutes until the carrots soften and the serrano aroma fills the kitchen.
- 03Warm the lavash directly over the gas flame for 10 seconds per side until pliable and slightly charred at the edges.
- 04To assemble, place the warm lavash on a plate, pile the carrot-serrano mixture in the center, and top with the warm halloumi. Roll the lavash tightly. Serve immediately with the fresh watermelon on the side to cut through the richness of the cheese.
