Bison and Fava Bean Keema with Spiced Basmati Rice

Ingredients
- 8.3431 oz ground bison
- 1.6221 oz fava beans
- 1 each scallion
- 0.0999 cup coconut milk
- 1 clove garlic
- 0.5 tsp ginger
- 0.5 tsp ground cumin
- 0.5 tsp garam masala
- 0.5 tsp salt
- 0.25 tsp black pepper
- 0.1573 cup basmati rice
- 0.5 cup water
Method
- 01Rinse basmati rice in cold water until clear. Bring 118 g water and rice to a boil in a small pot, cover, lower heat, and simmer for 12 minutes until tender. Fluff with a fork.
- 02Heat a large skillet over medium-high heat. Add ground bison and cook for 6-8 minutes, breaking into crumbles, until browned and cooked to a safe internal temperature of 160°F (71°C).
- 03Lower heat to medium. Add minced garlic, grated ginger, and chopped scallion; sauté for 2-3 minutes until fragrant.
- 04Add shelled fava beans, ground cumin, garam masala, salt, and cracked black pepper. Stir in a splash of water, cover, and steam for 5 minutes until beans are tender.
- 05Pour in coconut milk, stir to combine, and simmer gently for 2 to 3 minutes until sauce thickens slightly and coats the meat.
- 06Spoon the cooked basmati rice into a dish and top with the bison and fava bean keema. Serve hot.
