Smoky Cajun-Spiced Freekeh and Kidney Bean Skillet with Sautéed Spinach

Ingredients
- 30.1 g freekeh
- 140 g canned red kidney beans
- 15.5 g olive oil
- 60 g yellow onion
- 10 g garlic
- 2 tbsp Cajun seasoning blend
- 200 g spinach
- 0.25 tsp salt
- 0.25 tsp black pepper
- 1 tbsp lemon juice
Method
- 01Rinse the freekeh thoroughly. In a small pot, combine freekeh with 1 cup of water and a pinch of salt. Bring to a boil, then cover, reduce heat to low, and simmer for 20 minutes until tender. Drain any excess water.
- 02Heat 10 g of olive oil in a skillet over medium-high heat. Add diced yellow onion and sauté for 4-5 minutes until translucent.
- 03Stir in minced garlic and Cajun seasoning blend; sauté for 30 seconds until fragrant.
- 04Add drained kidney beans and cooked freekeh to the skillet. Sauté for 5 minutes, stirring occasionally, until hot and lightly browned.
- 05Fold in fresh spinach in batches along with the remaining 5.5 g olive oil. Cook for 1-2 minutes until spinach is fully wilted. Season with black pepper and remaining salt.
- 06Serve hot in a deep bowl with an optional squeeze of fresh lemon juice.
