American-Style Smoky Black Bean and Sweet Potato Chili with Cornbread Crumb

Ingredients
- 0.5 cup black beans
- 1 each sweet potato
- 0.5 each yellow onion
- 2 clove garlic
- 0.4929 tbsp extra-virgin olive oil
- 1 tsp smoked paprika
- 0.5 tsp cajun seasoning
- 0.5 tsp salt
- 1 slice whole-wheat bread
Method
- 01Soak dry black beans in water overnight (at least 8 hours); drain and rinse well.
- 02Heat olive oil in a heavy-bottomed pot over medium heat. Add diced yellow onion and minced garlic; sauté for 5 minutes until translucent and soft.
- 03Stir in smoked paprika and Cajun seasoning, cooking for 1 minute until fragrant.
- 04Add drained soaked black beans, cubed sweet potato, salt, and 2 cups of water. Bring to a boil, then reduce heat, partially cover, and simmer for 45 to 50 minutes until beans are tender and sweet potatoes are soft.
- 05While chili simmers, toast the whole-wheat bread until dark and crisp. Crumble coarsely by hand or in a food processor.
- 06Ladle the hot chili into a deep bowl and top with toasted whole-wheat crumbs before serving.
