Smoked Paprika-Spiced Baked Tofu and Brown Rice Bowl with Wilted Kale

Ingredients
- 151.3 g firm tofu
- 2 g smoked paprika
- 70 g long-grain brown rice
- 0.75 cup water
- 150 g kale
- 50 g yellow onion
- 4 g olive oil
- 1 tsp lemon juice
- 1 pinch sea salt
Method
- 01Preheat the oven to 400°F (200°C).
- 02Press the firm tofu to remove excess moisture, then cut into 1-inch cubes. Toss with 2 g of olive oil and smoked paprika until evenly coated. Spread on a parchment-lined baking sheet and bake for 20-25 minutes until golden brown and firm.
- 03In a small pot, bring long-grain brown rice and water to a boil, then reduce heat to low, cover, and simmer for 40 minutes until tender. Drain any excess water.
- 04In a skillet, heat the remaining 2 g of olive oil over medium heat. Add diced yellow onion and cook for 3-4 minutes until translucent. Add chopped kale and a splash of water, tossing until tender and vibrant green.
- 05Spoon the cooked brown rice into a bowl, layer with wilted kale and onions, and top with crispy smoked paprika tofu. Finish with sea salt and fresh lemon juice.
