Ingredients
  • 44 g soba noodles
  • 108.9 g seitan
  • 0.2574 tbsp sesame oil
  • 75 g butter lettuce
  • 75 g red leaf lettuce
  • 3 clove garlic
  • 2 each green onion
  • 1 tsp fresh ginger
  • 60 g Thai basil sauce
  • 143.9 g kalamata olive hummus
  • 0.25 cup Thai basil leaves
  • 1 pinch Aleppo pepper
Method
  1. 01Bring a pot of water to a boil, cook soba noodles for 4-5 minutes until al dente, drain, rinse in cold water, and drain thoroughly.
  2. 02Heat sesame oil in a wok or skillet over high heat. Add seitan chunks and cook for 3-4 minutes until well-browned and crispy on the edges.
  3. 03Add the minced garlic, minced ginger, sliced green onion, and half of the Thai basil leaves to the wok, stir-frying rapidly for 1 minute until fragrant.
  4. 04Pour in the Thai basil sauce and let it bubble for 1 minute to coat the seitan.
  5. 05Toss in the cooked soba noodles and stir-fry for 1-2 minutes until heated through and well-coated.
  6. 06Arrange the chopped butter lettuce and red leaf lettuce in a serving bowl, top with the stir-fried soba noodles and seitan, dollop with kalamata olive hummus, and garnish with remaining fresh Thai basil and Aleppo pepper.
