Seitan and Soba Noodle Stir-fry with Ginger, Garlic, and Thai Basil

Ingredients
- 44 g soba noodles
- 108.9 g seitan
- 0.2574 tbsp sesame oil
- 75 g butter lettuce
- 75 g red leaf lettuce
- 3 clove garlic
- 2 each green onion
- 1 tsp fresh ginger
- 60 g Thai basil sauce
- 143.9 g kalamata olive hummus
- 0.25 cup Thai basil leaves
- 1 pinch Aleppo pepper
Method
- 01Bring a pot of water to a boil, cook soba noodles for 4-5 minutes until al dente, drain, rinse in cold water, and drain thoroughly.
- 02Heat sesame oil in a wok or skillet over high heat. Add seitan chunks and cook for 3-4 minutes until well-browned and crispy on the edges.
- 03Add the minced garlic, minced ginger, sliced green onion, and half of the Thai basil leaves to the wok, stir-frying rapidly for 1 minute until fragrant.
- 04Pour in the Thai basil sauce and let it bubble for 1 minute to coat the seitan.
- 05Toss in the cooked soba noodles and stir-fry for 1-2 minutes until heated through and well-coated.
- 06Arrange the chopped butter lettuce and red leaf lettuce in a serving bowl, top with the stir-fried soba noodles and seitan, dollop with kalamata olive hummus, and garnish with remaining fresh Thai basil and Aleppo pepper.
