Ingredients
- 90 g lobster
- 9 g white rice
- 97 g green beans
- 4 g extra virgin olive oil
- 0.5 clove garlic
- 0.25 tsp salt
- 5 g flat-leaf parsley
Method
- 01Cook white rice in salted boiling water according to package directions, drain and set aside warm.
- 02Blanch the trimmed green beans in boiling water for 3 minutes until vibrant green but crisp-tender, then drain well.
- 03In a small bowl, combine the boiled rice and blanched green beans.
- 04Cut raw lobster tail meat into 1-inch thick medallions and pat dry with paper towels. Season lightly with salt.
- 05In a non-stick skillet over medium-high heat, warm extra-virgin olive oil with minced garlic until fragrant (about 30 seconds).
- 06Add lobster medallions to the pan. Sear for 2 minutes per side until lobster is opaque throughout and reaches an internal temperature of 145°F (63°C).
- 07Transfer the rice and green bean mixture onto a serving plate. Top with seared lobster medallions, drizzle pan garlic oil over top, and garnish with fresh chopped flat-leaf parsley.
