  • 65 g ground goat meat
  • 44.8 g yam
  • 25 g yellow onion
  • 20 g coconut milk
  • 5 g jerk seasoning
  • 1 tsp vegetable oil
  • 0.25 tsp salt
  • 9 g Scotch Bonnet ketchup
Method
  1. 011. Place peeled yam cubes into a small pot of salted water, bring to a boil, and cook for 10-12 minutes until fork-tender. Drain well and mash smoothly.
  2. 022. In a skillet over medium-high heat, add half the vegetable oil, finely minced goat meat, and diced yellow onion. Cook for 5 to 6 minutes until the goat meat is cooked through, no longer pink, and reaches an internal temperature of 160°F (71°C).
  3. 033. In a medium bowl, combine the mashed yam, cooked goat and onion mixture, jerk seasoning, salt, and coconut milk. Stir until a uniform dough forms.
  4. 044. Shape the mixture into small, bite-sized croquette patties or logs.
  5. 055. Heat the remaining vegetable oil in the skillet over medium-high heat. Sear the croquettes for 2 to 3 minutes per side until a golden brown crust forms.
  6. 066. Remove croquettes from heat and rest for 2 minutes to set. Serve warm with Scotch Bonnet ketchup drizzled over top or on the side.
