Cajun-Spiced Grass-Fed Beef and Roasted Sweet Potato Skillet

Ingredients
- 285 g ground grass-fed beef
- 224.3 g sweet potato
- 107.7 g broccoli
- 44.9 g yellow onion
- 1.0593 tbsp olive oil
- 1.0571 tbsp Cajun seasoning
- 0.2667 tsp salt
- 1.0526 tbsp fresh parsley
Method
- 01Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper.
- 02Toss cubed sweet potatoes with 1/2 tablespoon olive oil, half of the Cajun seasoning, and a pinch of salt. Roast for 20 minutes until tender and browned at edges.
- 03Heat remaining 1/2 tablespoon olive oil in a cast-iron skillet over medium-high heat. Add ground grass-fed beef and diced onion. Break meat apart and cook for 8 to 10 minutes until meat reaches an internal temperature of 160°F (71°C) and onions are translucent.
- 04Add chopped broccoli and remaining Cajun seasoning to the skillet. Cook for 3 to 4 minutes until tender-crisp.
- 05Fold roasted sweet potatoes into skillet with beef and broccoli. Toss together for 2 minutes to meld flavors. Garnish with chopped fresh parsley before serving.
