  • 94.8 g sweet potato
  • 43.9 g ground beef
  • 29.2 g shallot
  • 0.2 tsp olive oil
  • 0.4 g cajun seasoning
  • 1 tbsp water
Method
  1. 01Place a heavy-bottomed cast iron skillet over medium-high heat. Add the diced sweet potatoes and 1 tbsp water, covering the skillet for 4 minutes to steam-soften.
  2. 02Remove the lid, add olive oil, and sauté for 3-4 minutes until the edges are golden brown and crispy.
  3. 03Push the potatoes to the side of the skillet and add the ground beef and minced shallots. Break the beef apart with a wooden spoon and cook until browned and fragrant, reaching a safe internal temperature of 160°F (71°C).
  4. 04Sprinkle the Cajun seasoning over the mixture, tossing everything together for 1-2 minutes to bloom the spices in the rendered fat.
  5. 05Serve warm in a small bowl.
