Ingredients
- 94.8 g sweet potato
- 43.9 g ground beef
- 29.2 g shallot
- 0.2 tsp olive oil
- 0.4 g cajun seasoning
- 1 tbsp water
Method
- 01Place a heavy-bottomed cast iron skillet over medium-high heat. Add the diced sweet potatoes and 1 tbsp water, covering the skillet for 4 minutes to steam-soften.
- 02Remove the lid, add olive oil, and sauté for 3-4 minutes until the edges are golden brown and crispy.
- 03Push the potatoes to the side of the skillet and add the ground beef and minced shallots. Break the beef apart with a wooden spoon and cook until browned and fragrant, reaching a safe internal temperature of 160°F (71°C).
- 04Sprinkle the Cajun seasoning over the mixture, tossing everything together for 1-2 minutes to bloom the spices in the rendered fat.
- 05Serve warm in a small bowl.
