  • 246.3 g ground turkey
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 64.8 g palm sugar
  • 173.1 g green bell pepper
  • 268.4 g spinach
  • 240.4 g white rice
  • 0.25 cup fresh mint
  • 0.5 each lime
Method
  1. 01Place 2 tablespoons of dry jasmine rice in a dry skillet over medium heat. Toast, shaking the pan constantly, until the grains are deep golden brown and fragrant, about 5 minutes. Transfer to a mortar and pestle and grind into a coarse powder.
  2. 02In the same skillet over medium-high heat, add the ground turkey. Sauté, breaking it up with a wooden spoon, until browned and cooked through to an internal temperature of at least 160°F (71°C), about 6 to 8 minutes.
  3. 03Remove turkey from heat and transfer to a large mixing bowl. Add fish sauce, lime juice, palm sugar, and sliced green bell pepper, tossing to coat thoroughly.
  4. 04Fold in fresh spinach leaves just until lightly wilted from residual heat. Stir in the toasted rice powder.
  5. 05Serve hot alongside steamed jasmine rice. Garnish with fresh mint leaves and lime wedges.
