  • 132.8 g blue mussels
  • 62.7 g sweet potato
  • 0.7 g olive oil
  • 10.9 g shallot
  • 5 g garlic
  • 3 g Old Bay seasoning
  • 30 ml water
Method
  1. 01In a small pot, heat the olive oil over medium heat. Add the minced shallot and garlic, sautéing until translucent and fragrant, about 2 minutes.
  2. 02Add the finely diced sweet potato and 30 ml (about 2 tbsp) water. Cover and steam for 6-8 minutes until tender.
  3. 03Add the cleaned and debearded mussels to the pot and sprinkle liberally with Old Bay seasoning. Cover tightly with a lid and steam over medium-high heat for 3-4 minutes until the mussel shells open wide, indicating the mussels are fully cooked (reaching an internal temperature of 145°F/63°C). Discard any mussels that remain tightly closed.
  4. 04Remove from heat. Allow the natural juices from the mussels to combine with the garlic-shallot broth and spice.
  5. 05Transfer the sweet potatoes and mussels to a wide serving bowl, pouring the broth over top. Serve hot.
