American-Style Mussels with Old Bay and Garlic-Shallot Broth

- 132.8 g blue mussels
- 62.7 g sweet potato
- 0.7 g olive oil
- 10.9 g shallot
- 5 g garlic
- 3 g Old Bay seasoning
- 30 ml water
Method
- 01In a small pot, heat the olive oil over medium heat. Add the minced shallot and garlic, sautéing until translucent and fragrant, about 2 minutes.
- 02Add the finely diced sweet potato and 30 ml (about 2 tbsp) water. Cover and steam for 6-8 minutes until tender.
- 03Add the cleaned and debearded mussels to the pot and sprinkle liberally with Old Bay seasoning. Cover tightly with a lid and steam over medium-high heat for 3-4 minutes until the mussel shells open wide, indicating the mussels are fully cooked (reaching an internal temperature of 145°F/63°C). Discard any mussels that remain tightly closed.
- 04Remove from heat. Allow the natural juices from the mussels to combine with the garlic-shallot broth and spice.
- 05Transfer the sweet potatoes and mussels to a wide serving bowl, pouring the broth over top. Serve hot.
