  • 100 g yellow onion
  • 228.5 g spinach
  • 0.5 g red pepper flakes
  • 14 g butter
  • 2 slice sourdough bread
  • 3 g salt
  • 162.1 g ground beef
  • 0.25 tsp garlic powder
  • 0.25 tsp black pepper
Method
  1. 01Shape the grass-fed ground beef into a thin, rectangular patty matching the size of your sourdough bread slices. Season liberally with half the salt, black pepper, and garlic powder.
  2. 02Heat a heavy cast-iron skillet over medium-high heat with half of the butter. Add the beef patty and sear for 3-4 minutes per side until a deep, dark crust forms and the center reaches a safe internal temperature of 160°F (71°C). Remove from the pan and let rest.
  3. 03In the same skillet, add the remaining butter and the sliced onions. Sauté over medium heat, stirring frequently, until they are deeply caramelized, soft, and sweet, about 10 minutes. If the pan gets dry, add a tiny splash of water to deglaze.
  4. 04Add the fresh spinach to the onions in the pan, tossing for 1-2 minutes just until wilted. Season with the remaining salt and crushed red pepper flakes.
  5. 05Toast the sourdough bread slices until golden brown.
  6. 06Assemble the sandwich by piling the caramelized onions and spinach onto one slice of toasted bread, topping with the rested beef patty, and closing with the second slice. Press down gently so the juices soak into the bread. Serve immediately while hot and crisp.
