- 12.9 g Olive oil
- 50 g Onion, minced
- 10 g Cajun seasoning
Method
- 01Heat the olive oil in a heavy-bottomed cast iron skillet over medium-high heat. Add the diced sweet potatoes and cook, stirring occasionally, for 8-10 minutes until they are tender and developing a golden-brown crust.
- 02Add the minced onions and cook for another 3 minutes until translucent. Increase the heat to high and add the ground bison. Break it up with a wooden spoon and season liberally with the Cajun seasoning. Sear the bison until deeply browned and fragrant, allowing the edges to crisp up slightly against the hot pan.
- 03Fold in the chopped kale in handfuls, letting it wilt into the residual heat of the skillet until vibrant green and tender. Toss everything together to combine the spices and juices. Taste and adjust with a pinch of salt if needed. Serve immediately in a warm bowl, ensuring the crispy bits of potato and bison are evenly distributed.
