Ingredients
  • 256.6 g ground turkey
  • 285.6 g sweet potato
  • 100 g spinach
  • 60 g yellow onion
  • 2 clove garlic
  • 0.5357 tbsp olive oil
  • 1 tsp ground cumin
  • 0.25 tsp ground cinnamon
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp water
  • 1 tbsp lime juice
  • 1 tbsp slivered almonds
Method
  1. 01Heat olive oil in a large skillet over medium-high heat. Add chopped yellow onion and minced garlic, sautéing for 2 minutes until translucent.
  2. 02Add ground turkey, breaking it up with a spoon. Sauté for 6-8 minutes until turkey is browned and reaches an internal temperature of 160°F (71°C).
  3. 03Add diced sweet potato, ground cumin, ground cinnamon, salt, and black pepper. Stir to combine, then add 2 tbsp water. Reduce heat to medium, cover, and cook for 10-12 minutes, stirring occasionally, until sweet potatoes are tender.
  4. 04Uncover and fold in fresh spinach in handfuls until completely wilted and glossy, about 2 minutes.
  5. 05Confirm turkey is fully cooked through and ground red meat safety threshold of 160°F (71°C) is verified.
  6. 06Transfer to a bowl, squeeze fresh lime juice over top, and finish with toasted slivered almonds.
