Mussels with Aleppo Pepper, Garlic, and Charred Lemon

Ingredients
- 91.5 g fresh mussels
- 1 tsp extra virgin olive oil
- 1 clove garlic
- 1 tsp Aleppo pepper flakes
- 0.5 each lemon
- 1 pinch salt
- 27.7 g whole-wheat pita bread
Method
- 01Heat the olive oil in a small heavy-bottomed pan over medium-high heat. Add the minced garlic and 3/4 tsp of the Aleppo pepper, stirring for 30 seconds until the oil is fragrant and vibrant red. Add a charred lemon half cut-side down briefly to sear.
- 02Add the cleaned mussels to the pan and cover immediately with a tight-fitting lid. Steam for 3 to 4 minutes, shaking the pan occasionally, until every shell has opened and seafood is fully cooked to an internal temperature of 145°F (63°C). Discard any mussels that remain tightly closed.
- 03While the mussels steam, toast the pita bread directly over a gas flame or in a toaster until lightly charred and warm. Slice into small triangles.
- 04Transfer the mussels and aromatic pan juices to a shallow bowl. Squeeze the charred lemon over the top, sprinkle with the remaining 1/4 tsp Aleppo pepper and salt, and serve immediately alongside the warm charred pita.
