  • 50g Ground Turkey, raw
  • 80g Cooked Quinoa
  • 30g Spinach, raw, finely chopped
  • 6g Fresh Honey (for glaze/fermentation balance)
  • 5g Garlic, Bird's eye chili, and black peppercorns
Method
  1. 01In a mixing bowl, combine the ground turkey, cooked quinoa, minced garlic, finely chopped bird's eye chili, and cracked black peppercorns.
  2. 02Add the finely chopped spinach and honey.
  3. 03Knead the mixture thoroughly until it becomes tacky and emulsified.
  4. 04Shape into a small, firm rectangular log, similar to a traditional Nem Chua.
  5. 05Wrap tightly in plastic wrap to create a vacuum-like seal.
  6. 06Allow the mixture to rest at room temperature for 1 hour to let the aromatics bloom and meld before serving.
  7. 07To serve, unwrap and slice into thin, bite-sized medallions.
  8. 08Garnish with an extra dusting of cracked black pepper and serve alongside a few fresh, crisp spinach leaves for texture.
