Mediterranean Spiced Lamb and White Bean Skillet with Za'atar and Shallots

Ingredients
- 192.2 g ground lamb
- 159.2 g canned white beans
- 27.4 g shallot
- 216.9 g grape tomatoes
- 21.6 g za'atar spice blend
- 1.1778 tsp extra virgin olive oil
- 0.3 tsp salt
- 216.9 g cucumber
- 0.1667 tsp black pepper
Method
- 01Place a large skillet over medium-high heat with extra virgin olive oil. Add the ground lamb, salt, and half of the za'atar seasoning. Cook, breaking up the meat with a wooden spoon, until deeply browned and cooked through with an internal temperature reaching 160°F (71°C), about 8-10 minutes.
- 02Drain excess rendered fat from the pan if needed, leaving approximately 1 tablespoon in the skillet.
- 03Add the minced shallots to the skillet and sauté in the remaining fat until softened and fragrant, about 2 minutes. Stir in the remaining za'atar seasoning to bloom in the hot fat for 30 seconds.
- 04Fold in the drained white beans and halved grape tomatoes. Cook for 3-4 minutes until the tomatoes blister and release their juices to form a light sauce coating the beans and meat.
- 05Remove the skillet from heat. Immediately fold in the diced cucumber to create a cool contrast.
- 06Season with freshly cracked black pepper and serve immediately.
