  • 2.0536 oz salmon fillet
  • 1 tbsp Cajun seasoning
  • 2.016 cup sweet potato
  • 0.75 cup kale
  • 0.25 cup yellow onion
  • 1 clove garlic
  • 2.0143 tbsp olive oil
  • 0.25 tsp salt
  • 1 tsp lemon juice
Method
  1. 01Heat 1 tablespoon of olive oil in a heavy cast-iron skillet over medium-high heat. Add the diced sweet potatoes and salt, sautéing for 10–12 minutes until tender inside and caramelized on the outside.
  2. 02Coat the salmon fillet generously on all sides with Cajun seasoning, pressing it firmly into the flesh.
  3. 03Push the sweet potatoes to one side of the skillet. Place the salmon fillet skin-side down in the hot skillet. Sear for 4 minutes until the skin is crisp and edges show opacity.
  4. 04Flip the salmon carefully. Add diced yellow onion, minced garlic, and chopped kale to the pan. Sauté the greens and aromatics until kale is wilted, about 3 minutes.
  5. 05Ensure salmon reaches an internal temperature of 145°F (63°C) and flakes easily with a fork. Remove from heat.
  6. 06Plate the blackened salmon alongside skillet-charred sweet potatoes and wilted kale, then drizzle with fresh lemon juice before serving.
