Ingredients
  • 0.3861 cup green lentils
  • 0.8211 each sweet potato
  • 1 cup kale
  • 0.5 each yellow onion
  • 2 clove garlic
  • 1 tsp fresh ginger
  • 1.5 cup vegetable broth
  • 1 tbsp olive oil
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2.0946 tbsp slivered almonds
  • 1 tbsp lime juice
Method
  1. 01Heat olive oil in a heavy-bottomed pot over medium heat. Add diced yellow onion, minced garlic, and minced ginger; cook until soft and translucent, about 5 minutes.
  2. 02Add cubed sweet potatoes and smoked paprika to the pot. Stir to coat with the aromatics and cook for 3 minutes.
  3. 03Add rinsed dry green lentils and vegetable broth. Bring to a boil, then reduce heat to low, cover partially, and simmer gently for 20 to 25 minutes until lentils and sweet potatoes are tender.
  4. 04Stir in the chopped kale and cook uncovered for 2 to 3 minutes until wilted and vibrant green.
  5. 05Season stew with salt and black pepper. Stir in fresh lime juice.
  6. 06Ladle stew into a serving bowl and top with toasted slivered almonds before serving.
