Grass-Fed Beef and Sweet Potato Hash with Wilted Kale and Fried Eggs

Ingredients
- 110 g grass-fed ground beef
- 230 g sweet potato
- 50 g yellow onion
- 50 g kale
- 1 tsp olive oil
- 0.25 tsp garlic powder
- 0.25 tsp smoked paprika
- 0.25 tsp salt
- 0.125 tsp black pepper
- 1 each egg
Method
- 01Heat a large skillet over medium-high heat and add 3 g of olive oil.
- 02Add diced sweet potatoes and yellow onions. Sauté for 8-10 minutes, stirring occasionally, until potatoes are tender and golden at the edges.
- 03Push vegetables to one side of the pan and add ground beef. Season with salt, black pepper, and garlic powder. Break beef apart and cook until fully browned and cooked to an internal temperature of 160°F (71°C).
- 04Toss chopped kale into the pan and cook for 1-2 minutes until wilted and bright green, then transfer hash to a plate.
- 05Add remaining 1.5 g olive oil to pan, crack in the egg, and fry until egg whites are set and firm and yolk reaches desired doneness (or cooked to 160°F / 71°C for safe food handling).
- 06Top hash with the fried egg, sprinkle with smoked paprika, and serve immediately.
