Lamb and Sweet Potato Hash with Wilted Kale and Smoked Paprika

Ingredients
- 85.6 g ground lamb
- 295.3 g sweet potato
- 52.8 g yellow onion
- 1 tsp olive oil
- 2 tsp smoked paprika
- 0.5 tsp salt
- 168.8 g kale
Method
- 01Heat the extra-virgin olive oil in a large cast-iron skillet over medium-high heat.
- 02Add the diced sweet potatoes and cook, stirring occasionally, until they develop a deep brown crust and are tender through, about 10–12 minutes.
- 03Add the finely diced onions and sauté for 3 minutes until translucent and fragrant.
- 04Push the sweet potatoes and onions to the side of the pan. Add the ground lamb to the center.
- 05Break the lamb apart with a wooden spoon and cook for 5–7 minutes until fully browned and the internal temperature reaches 160°F (71°C).
- 06Sprinkle the smoked paprika and fine sea salt over the entire skillet mixture, tossing well to bloom the spices in the rendered fat.
- 07Fold in the chopped kale and cook for 2–3 minutes until wilted and vibrant green.
- 08Serve hot in a shallow bowl, ensuring a mix of crispy potato edges, savory lamb, and tender greens.
