Ingredients
  • 190.5 g ground turkey
  • 65.3 g sweet potato
  • 7.4 g peanut butter
  • 98 g spinach
  • 40 g yellow onion
  • 1 clove garlic
  • 0.5 tsp fresh ginger
  • 1 tbsp tomato paste
  • 0.5556 tsp peanut oil
  • 1 tsp lime juice
  • 0.25 tsp cayenne pepper
  • 0.5 tsp salt
  • 120 ml water
  • 163.2 g long-grain white rice
Method
  1. 01Heat peanut oil in a heavy-bottomed pot over medium-high heat. Add the ground turkey and brown thoroughly for 6-8 minutes until cooked through and an internal temperature of 160°F (71°C) is reached, breaking it into small crumbles.
  2. 02Add the diced yellow onion, garlic, and grated ginger to the pot. Sauté for 3 minutes until softened and fragrant.
  3. 03Stir in the tomato paste and diced sweet potatoes, then pour in 60 ml of water. Cover and simmer over medium heat for 10 minutes until sweet potatoes are tender.
  4. 04In a small bowl, whisk the peanut butter with 60 ml of warm water until smooth, then pour into the pot. Simmer gently for 5 minutes until the sauce thickens and turns glossy.
  5. 05Fold in the fresh spinach leaves, simmering for 60 seconds until bright green and wilted.
  6. 06Season with lime juice, cayenne pepper, and salt.
  7. 07Serve the stew over a bed of hot cooked long-grain white rice.
