West African Peanut Stew (Maafe) with Braised Turkey and Wilted Spinach

Ingredients
- 190.5 g ground turkey
- 65.3 g sweet potato
- 7.4 g peanut butter
- 98 g spinach
- 40 g yellow onion
- 1 clove garlic
- 0.5 tsp fresh ginger
- 1 tbsp tomato paste
- 0.5556 tsp peanut oil
- 1 tsp lime juice
- 0.25 tsp cayenne pepper
- 0.5 tsp salt
- 120 ml water
- 163.2 g long-grain white rice
Method
- 01Heat peanut oil in a heavy-bottomed pot over medium-high heat. Add the ground turkey and brown thoroughly for 6-8 minutes until cooked through and an internal temperature of 160°F (71°C) is reached, breaking it into small crumbles.
- 02Add the diced yellow onion, garlic, and grated ginger to the pot. Sauté for 3 minutes until softened and fragrant.
- 03Stir in the tomato paste and diced sweet potatoes, then pour in 60 ml of water. Cover and simmer over medium heat for 10 minutes until sweet potatoes are tender.
- 04In a small bowl, whisk the peanut butter with 60 ml of warm water until smooth, then pour into the pot. Simmer gently for 5 minutes until the sauce thickens and turns glossy.
- 05Fold in the fresh spinach leaves, simmering for 60 seconds until bright green and wilted.
- 06Season with lime juice, cayenne pepper, and salt.
- 07Serve the stew over a bed of hot cooked long-grain white rice.
