Grass-Fed Beef and Sweet Potato Tagine with Harissa-Infused Aromatics

Ingredients
- 154.9 g ground beef
- 341.3 g sweet potato
- 100 g yellow onion
- 2 clove garlic
- 1 tbsp harissa paste
- 1 tsp smoked paprika
- 0.5 tsp salt
- 1 cup water
- 0.3429 tbsp olive oil
- 50 g spinach
- 1 pinch black pepper
Method
- 01Preheat oven to 375°F (190°C).
- 02Heat 2 teaspoons of extra virgin olive oil in a heavy oven-safe Dutch oven over medium-high heat. Add the ground beef and brown thoroughly, breaking it apart with a wooden spoon for 6-8 minutes until deeply browned and reaching a safe internal temperature of 160°F (71°C).
- 03Stir in the diced yellow onion, minced garlic, harissa paste, smoked paprika, and salt. Cook for 3-4 minutes until onions are soft and aromatic.
- 04Fold in the cubed sweet potatoes to coat in the spices and rendered fat. Pour in 1 cup of water (enough to barely cover the potatoes).
- 05Cover with a tight lid and place in the oven. Braise for 30 minutes, or until the sweet potatoes are fork-tender and the liquid is reduced to a rich sauce.
- 06Remove from the oven and stir in the fresh spinach until wilted by the residual heat.
- 07Serve hot, drizzled with the remaining 1 teaspoon of extra virgin olive oil and a crack of fresh black pepper.
