Ingredients
  • 154.9 g ground beef
  • 341.3 g sweet potato
  • 100 g yellow onion
  • 2 clove garlic
  • 1 tbsp harissa paste
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 1 cup water
  • 0.3429 tbsp olive oil
  • 50 g spinach
  • 1 pinch black pepper
Method
  1. 01Preheat oven to 375°F (190°C).
  2. 02Heat 2 teaspoons of extra virgin olive oil in a heavy oven-safe Dutch oven over medium-high heat. Add the ground beef and brown thoroughly, breaking it apart with a wooden spoon for 6-8 minutes until deeply browned and reaching a safe internal temperature of 160°F (71°C).
  3. 03Stir in the diced yellow onion, minced garlic, harissa paste, smoked paprika, and salt. Cook for 3-4 minutes until onions are soft and aromatic.
  4. 04Fold in the cubed sweet potatoes to coat in the spices and rendered fat. Pour in 1 cup of water (enough to barely cover the potatoes).
  5. 05Cover with a tight lid and place in the oven. Braise for 30 minutes, or until the sweet potatoes are fork-tender and the liquid is reduced to a rich sauce.
  6. 06Remove from the oven and stir in the fresh spinach until wilted by the residual heat.
  7. 07Serve hot, drizzled with the remaining 1 teaspoon of extra virgin olive oil and a crack of fresh black pepper.
