  • 1 each pita bread
  • 108.3 g canned chickpeas
  • 200 g plain greek yogurt
  • 1 clove garlic
  • 1 tbsp lemon juice
  • 0.25 tsp salt
  • 0.3714 tbsp extra virgin olive oil
  • 1 tbsp pine nuts
  • 2 tbsp parsley
  • 0.25 tsp ground sumac
Method
  1. 01Preheat oven to 400°F (200°C). Lay pita squares on a sheet pan and bake for 8-10 minutes until golden and crisp.
  2. 02In a small skillet over medium heat, toast pine nuts in 1 tsp of extra virgin olive oil for 2-3 minutes until golden brown; remove from heat.
  3. 03In a small pan, warm drained chickpeas in a splash of water over low heat for 3-4 minutes; drain.
  4. 04In a bowl, whisk Greek yogurt, minced garlic, lemon juice, and salt until smooth.
  5. 05Assemble by laying crispy pita in a shallow dish, covering with warm chickpeas, pouring garlic-yogurt sauce over top, drizzling with remaining olive oil and toasted pine nuts, then dusting with sumac and fresh parsley.
