  • 196.1 g Turkey, Ground, raw
  • 159.4 g Rice, white, long-grain, regular, enriched, cooked
  • 70.1 g Sweet potato, raw (grated for filler/texture)
  • 19.1 g Raisins (for traditional sweet notes)
  • 127.5 g Spinach, raw (finely chopped into loaf)
  • 8.7 g Oil, olive, salad or cooking
Method
  1. 01In a large bowl, combine the ground turkey, finely grated sweet potato, chopped spinach, and raisins. Season generously with sea salt, black pepper, and a dash of soy sauce.
  2. 02Shape the mixture into a tight log using parchment paper, wrapping it securely like a candy wrapper to ensure it holds its shape during steaming.
  3. 03Place the log in a steamer basket over boiling water. Cover and steam for 40-45 minutes until the loaf is firm to the touch and cooked through.
  4. 04While the embutido steams, prepare the white rice.
  5. 05Once finished, remove the parchment paper. Slice the embutido into thick, beautiful rounds, revealing the vibrant speckles of spinach and sweet potato.
  6. 06Serve the warm slices alongside a generous mound of fluffy steamed white rice. Drizzle with a little extra virgin olive oil if desired for richness, and serve immediately.
