  • 181.5 g canned chickpeas
  • 37.4 g feta cheese
  • 16 g all-purpose flour
  • 2 tbsp fresh flat-leaf parsley
  • 1 tbsp fresh mint
  • 0.5 tsp ground cumin
  • 0.25 tsp red pepper flakes
  • 0.25 tsp salt
  • 0.2 tbsp extra virgin olive oil
  • 57 g plain greek yogurt
  • 1 tbsp fresh dill
  • 1 tsp lemon juice
Method
  1. 01In a bowl, mix 57 g plain greek yogurt, 1 tbsp chopped fresh dill, and 1 tsp fresh lemon juice until smooth. Set dip aside in the refrigerator.
  2. 02In a medium bowl, coarse-mash 164 g drained and rinsed chickpeas using a potato masher or fork.
  3. 03Fold in 57 g crumbled feta cheese, 2 tbsp chopped parsley, 1 tbsp chopped mint, 0.5 tsp ground cumin, 0.25 tsp crushed red pepper flakes, 0.25 tsp salt, and 16 g all-purpose flour until cohesive.
  4. 04Shape chickpea mixture tightly into 4 equal round patties (approx. 2 inches wide).
  5. 05Heat 1 tbsp olive oil in a non-stick skillet over medium-high heat until shimmering.
  6. 06Sauté fritters for 3 to 4 minutes per side until crisp and golden brown. Transfer to paper towels to drain briefly.
  7. 07Serve warm fritters immediately alongside the chilled yogurt-dill dip.
