Method
- 01In a non-stick skillet over medium-high heat, add the lean ground bison and sear, breaking it apart, until cooked through to an internal temperature of 160°F (71°C) and deeply browned.
- 02Add the grated sweet potato shreds to the skillet. Sauté for 3-4 minutes until the potato is tender and lightly caramelized from the meat drippings.
- 03Stir in the gochujang, adding a splash of water (about 1 tbsp) to loosen it into a glossy glaze that coats every bite of the bison and sweet potato.
- 04Fold in the fresh sliced scallions, tossing for 30-60 seconds just until they wilt slightly and release their oniony aroma.
- 05Transfer to a small bowl, sprinkle with toasted sesame seeds, and serve immediately.
