Banh Day Gio (Vietnamese Steamed Rice Cake with Cha Lua)

Ingredients
- 35 g glutinous rice flour
- 2 tbsp water
- 14.9 g pork sausage
- 41.8 g sweet potato
- 228.3 g fresh spinach
- 1 pinch salt
- 5 g almonds
Method
- 01Mix glutinous rice flour with water to form a smooth dough, shape into small round flat cakes, and steam for 8-10 minutes until chewy and translucent.
- 02Steam the sweet potato until soft, then mash with a pinch of salt until smooth.
- 03Steam the spinach for 1 minute until wilted, squeeze out excess moisture, and set aside.
- 04Steam the cha lua slices for 2 minutes until heated through and warm.
- 05Spread a thin layer of mashed sweet potato over the steamed glutinous rice cake.
- 06Layer warm cha lua and wilted spinach on top of the rice cake.
- 07Garnish with crushed almonds and serve warm.
- 08Cook the pork until the pork reaches an internal temperature of 160°F (71°C) in its thickest part before serving.
