Method
- 01Rinse long-grain brown rice in cold water. Combine rice with 45 ml water in a small saucepan, bring to a boil, cover, reduce heat to low, and simmer for 40 minutes until tender.
- 02Ensure red kidney beans are soaked overnight and boiled until soft.
- 03Heat extra-virgin olive oil in a heavy skillet over medium heat. Add diced onion, green bell pepper, and celery (Holy Trinity); cook for 5 to 7 minutes until vegetables are soft.
- 04Add minced garlic and Cajun seasoning blend to the skillet; stir for 30 seconds until fragrant.
- 05Add cooked kidney beans and salt, tossing to coat in the spice mixture. Cook for 5 minutes over medium-low heat.
