  • 6.2 g garlic
  • 284.5 g red kidney beans
  • 20 g celery
  • 20.7 g extra-virgin olive oil
  • 25 g green bell pepper
  • 9.2 g Cajun seasoning blend
  • 0.25 tsp salt
  • 30.6 g yellow onion
  • 16.3 g long-grain brown rice
Method
  1. 01Rinse long-grain brown rice in cold water. Combine rice with 45 ml water in a small saucepan, bring to a boil, cover, reduce heat to low, and simmer for 40 minutes until tender.
  2. 02Ensure red kidney beans are soaked overnight and boiled until soft.
  3. 03Heat extra-virgin olive oil in a heavy skillet over medium heat. Add diced onion, green bell pepper, and celery (Holy Trinity); cook for 5 to 7 minutes until vegetables are soft.
  4. 04Add minced garlic and Cajun seasoning blend to the skillet; stir for 30 seconds until fragrant.
  5. 05Add cooked kidney beans and salt, tossing to coat in the spice mixture. Cook for 5 minutes over medium-low heat.
  6. 06Fold cooked brown rice into the bean mixture and heat through for 2 to 3 minutes. Adjust seasoning to taste and serve hot.
