  • 38.1 g chana dal flour
  • 149.9 g chicken breast
  • 11.9 g spinach
  • 11.9 g low-fat plain yogurt
  • 0.25 tsp baking soda
  • 0.25 cup water
  • 0.25 tsp salt
  • 10 g olive oil
  • 0.5 tsp mustard seeds
  • 1 each green chili pepper
  • 5 each curry leaves
  • 2 tbsp cilantro
  • 1 tsp lime juice
Method
  1. 01Whisk the chana dal flour, yogurt, minced chicken breast, chopped spinach, salt, and water together in a bowl until a smooth, thick batter forms. Let it rest for 15 minutes.
  2. 02Set up a steamer with water over high heat and lightly grease a shallow steaming tray.
  3. 03Add the baking soda to the batter and stir quickly until light, aerated, and fluffy. Immediately pour into the greased tray.
  4. 04Steam on high heat for 15 to 18 minutes until spongy and a toothpick inserted into the center comes out clean, ensuring the chicken reaches a safe internal temperature of 165°F (74°C).
  5. 05Heat olive oil in a small pan over medium heat until shimmering. Add mustard seeds, sliced green chili, and curry leaves. Fry until the mustard seeds crackle and pop.
  6. 06Pour the tempered oil mixture evenly over the warm steamed dhokla. Slice into squares and garnish with fresh cilantro and a squeeze of lime juice.
