Gujarati Khaman Dhokla with Tempered Mustard Seeds and Cilantro

Ingredients
- 38.1 g chana dal flour
- 149.9 g chicken breast
- 11.9 g spinach
- 11.9 g low-fat plain yogurt
- 0.25 tsp baking soda
- 0.25 cup water
- 0.25 tsp salt
- 10 g olive oil
- 0.5 tsp mustard seeds
- 1 each green chili pepper
- 5 each curry leaves
- 2 tbsp cilantro
- 1 tsp lime juice
Method
- 01Whisk the chana dal flour, yogurt, minced chicken breast, chopped spinach, salt, and water together in a bowl until a smooth, thick batter forms. Let it rest for 15 minutes.
- 02Set up a steamer with water over high heat and lightly grease a shallow steaming tray.
- 03Add the baking soda to the batter and stir quickly until light, aerated, and fluffy. Immediately pour into the greased tray.
- 04Steam on high heat for 15 to 18 minutes until spongy and a toothpick inserted into the center comes out clean, ensuring the chicken reaches a safe internal temperature of 165°F (74°C).
- 05Heat olive oil in a small pan over medium heat until shimmering. Add mustard seeds, sliced green chili, and curry leaves. Fry until the mustard seeds crackle and pop.
- 06Pour the tempered oil mixture evenly over the warm steamed dhokla. Slice into squares and garnish with fresh cilantro and a squeeze of lime juice.
