Indian-Spiced Seitan and Spinach Curry (Palak Seitan)

Ingredients
- 52.2 g long-grain brown rice
- 241.1 g seitan
- 50 g fresh spinach
- 75.8 g yellow onion
- 7.6 g olive oil
- 2 g garlic
- 0.5 tsp garam masala
- 0.25 tsp salt
Method
- 01Rinse the long-grain brown rice thoroughly in cold water. Bring 1.5 cups of water to a boil, add the rice, reduce heat to low, cover, and simmer for 40 minutes until tender. Turn off the heat and let rest covered.
- 02In a heavy-bottomed pan, heat the olive oil over medium-high heat. Add the diced yellow onion and cook until translucent and soft, about 6 minutes.
- 03Stir in the minced garlic and garam masala; cook for 1 minute until highly fragrant.
- 04Add the seitan chunks to the pan and saute for 3 to 4 minutes until lightly browned on the edges.
- 05Add the fresh spinach in batches, folding gently until fully wilted and incorporated into the seitan curry, about 5 minutes.
- 06Season with salt, taste, and simmer for another 2 minutes until hot throughout.
- 07Spoon the cooked brown rice into a wide bowl and top with the hot palak seitan curry.
