  • 52.2 g long-grain brown rice
  • 241.1 g seitan
  • 50 g fresh spinach
  • 75.8 g yellow onion
  • 7.6 g olive oil
  • 2 g garlic
  • 0.5 tsp garam masala
  • 0.25 tsp salt
Method
  1. 01Rinse the long-grain brown rice thoroughly in cold water. Bring 1.5 cups of water to a boil, add the rice, reduce heat to low, cover, and simmer for 40 minutes until tender. Turn off the heat and let rest covered.
  2. 02In a heavy-bottomed pan, heat the olive oil over medium-high heat. Add the diced yellow onion and cook until translucent and soft, about 6 minutes.
  3. 03Stir in the minced garlic and garam masala; cook for 1 minute until highly fragrant.
  4. 04Add the seitan chunks to the pan and saute for 3 to 4 minutes until lightly browned on the edges.
  5. 05Add the fresh spinach in batches, folding gently until fully wilted and incorporated into the seitan curry, about 5 minutes.
  6. 06Season with salt, taste, and simmer for another 2 minutes until hot throughout.
  7. 07Spoon the cooked brown rice into a wide bowl and top with the hot palak seitan curry.
