Cajun-Spiced Grass-Fed Beef and White Bean Skillet

- 133.5 g canned white beans
- 35 g spinach
- 106.9 g sweet potato
- 149.9 g ground beef
- 0.1 tbsp extra virgin olive oil
- 0.25 tsp black pepper
- 100 g yellow onion
- 1 tbsp Cajun seasoning
- 0.25 tsp salt
Method
- 01In a preheated heavy-bottomed skillet over medium-high heat, add the extra virgin olive oil and grass-fed ground beef. Sauté, breaking up the beef with a wooden spoon, until browned and cooked through to a safe internal temperature of 160°F (71°C).
- 02Add the diced yellow onion to the skillet and sauté for 3-4 minutes until translucent and beginning to caramelize.
- 03Stir in the cubed sweet potatoes and Cajun seasoning. Toss to coat the ingredients evenly and bloom the spices in the pan fat.
- 04Add 2 tablespoons of water, cover the skillet with a lid, and steam on medium-low heat for 8-10 minutes until the sweet potatoes are tender.
- 05Fold in the drained white beans and fresh spinach. Cook uncovered for 2 minutes until the spinach is just wilted and the white beans are thoroughly heated through.
- 06Season with salt and ground black pepper to taste, then plate and serve hot.
