  • 133.5 g canned white beans
  • 35 g spinach
  • 106.9 g sweet potato
  • 149.9 g ground beef
  • 0.1 tbsp extra virgin olive oil
  • 0.25 tsp black pepper
  • 100 g yellow onion
  • 1 tbsp Cajun seasoning
  • 0.25 tsp salt
Method
  1. 01In a preheated heavy-bottomed skillet over medium-high heat, add the extra virgin olive oil and grass-fed ground beef. Sauté, breaking up the beef with a wooden spoon, until browned and cooked through to a safe internal temperature of 160°F (71°C).
  2. 02Add the diced yellow onion to the skillet and sauté for 3-4 minutes until translucent and beginning to caramelize.
  3. 03Stir in the cubed sweet potatoes and Cajun seasoning. Toss to coat the ingredients evenly and bloom the spices in the pan fat.
  4. 04Add 2 tablespoons of water, cover the skillet with a lid, and steam on medium-low heat for 8-10 minutes until the sweet potatoes are tender.
  5. 05Fold in the drained white beans and fresh spinach. Cook uncovered for 2 minutes until the spinach is just wilted and the white beans are thoroughly heated through.
  6. 06Season with salt and ground black pepper to taste, then plate and serve hot.
