- 21.8 g spinach
- 4.5 g olive oil
- 2.7 g pomegranate molasses
- 1 tsp baharat spice blend
- 0.25 tsp salt
- 0.25 tsp black pepper
- 1 tbsp pine nuts
- 2 sprig fresh mint leaves
Method
- 01Preheat your oven to 375°F (190°C).
- 02In a medium mixing bowl, combine the ground turkey, cooked quinoa, finely chopped spinach, pomegranate molasses, baharat spice blend, salt, black pepper, and half of the olive oil.

- 04Press the turkey and quinoa mixture firmly into the baking dish, smoothing the surface with a spatula.
- 05Using a paring knife, score the surface into diamond shapes.
- 06Drizzle the remaining olive oil over the top to ensure crispness during baking.
- 07Bake for 18 to 20 minutes until the edges are golden brown and the internal temperature of the turkey reaches 165°F (74°C) measured with a meat thermometer.
- 08Remove from the oven, let rest for 5 minutes, and garnish with toasted pine nuts and fresh mint leaves before slicing into squares.
