  • 57.2 g ground turkey
  • 15 g quinoa
  • 21.8 g spinach
  • 4.5 g olive oil
  • 2.7 g pomegranate molasses
  • 1 tsp baharat spice blend
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp pine nuts
  • 2 sprig fresh mint leaves
Method
  1. 01Preheat your oven to 375°F (190°C).
  2. 02In a medium mixing bowl, combine the ground turkey, cooked quinoa, finely chopped spinach, pomegranate molasses, baharat spice blend, salt, black pepper, and half of the olive oil.
  3. 03Grease a small baking dish using a small fraction of the remaining olive oil.
  4. 04Press the turkey and quinoa mixture firmly into the baking dish, smoothing the surface with a spatula.
  5. 05Using a paring knife, score the surface into diamond shapes.
  6. 06Drizzle the remaining olive oil over the top to ensure crispness during baking.
  7. 07Bake for 18 to 20 minutes until the edges are golden brown and the internal temperature of the turkey reaches 165°F (74°C) measured with a meat thermometer.
  8. 08Remove from the oven, let rest for 5 minutes, and garnish with toasted pine nuts and fresh mint leaves before slicing into squares.
