  • 160.9 g Atlantic salmon fillet
  • 88 g spinach
  • 1 tbsp soy sauce
  • 1 tsp honey
  • 0.25 cup quinoa
  • 1 tsp ginger root
  • 1 tbsp scallion
  • 0.6522 tsp sesame oil
Method
  1. 01In a small saucepan, bring 1/2 cup of water to a boil, add the dry quinoa, cover, reduce heat to low, and simmer for 15 minutes until tender. Fluff with a fork and fold in the grated ginger, sliced scallion, and toasted sesame oil.
  2. 02Line a steamer basket with fresh spinach leaves and place the Atlantic salmon fillet on top.
  3. 03Whisk together the soy sauce and honey, then drizzle over the salmon fillet.
  4. 04Steam over boiling water for 8 to 10 minutes, until the salmon reaches a safe internal temperature of 145°F (63°C) and flakes easily with a fork, and the spinach is wilted.
  5. 05Plate the warm ginger-scallion quinoa in a shallow bowl, lay the steamed salmon and spinach over top, and spoon any leftover steaming juices over the dish before serving.
