Steamed Atlantic Salmon Fillet with Ginger-Scallion Quinoa

Ingredients
- 160.9 g Atlantic salmon fillet
- 88 g spinach
- 1 tbsp soy sauce
- 1 tsp honey
- 0.25 cup quinoa
- 1 tsp ginger root
- 1 tbsp scallion
- 0.6522 tsp sesame oil
Method
- 01In a small saucepan, bring 1/2 cup of water to a boil, add the dry quinoa, cover, reduce heat to low, and simmer for 15 minutes until tender. Fluff with a fork and fold in the grated ginger, sliced scallion, and toasted sesame oil.
- 02Line a steamer basket with fresh spinach leaves and place the Atlantic salmon fillet on top.
- 03Whisk together the soy sauce and honey, then drizzle over the salmon fillet.
- 04Steam over boiling water for 8 to 10 minutes, until the salmon reaches a safe internal temperature of 145°F (63°C) and flakes easily with a fork, and the spinach is wilted.
- 05Plate the warm ginger-scallion quinoa in a shallow bowl, lay the steamed salmon and spinach over top, and spoon any leftover steaming juices over the dish before serving.
