Cajun-Style Grass-Fed Beef and Sweet Potato Hash with Wilted Kale

- 168.8 g grass-fed ground beef
- 293.4 g sweet potato
- 0.2 tbsp Cajun seasoning
- 0.5 tsp garlic powder
- 1 tsp olive oil
- 0.25 tsp sea salt
- 0.25 tsp black pepper
- 303.7 g kale
Method
- 01Dice the sweet potato into small, 1/2-inch cubes for quick, even cooking.
- 02Heat a large skillet over medium-high heat. Add the olive oil and ground beef, cooking and breaking it up with a wooden spoon for 6-8 minutes until browned, crispy at the edges, and fully cooked to an internal temperature of at least 160°F (71°C). Remove the cooked beef from the pan, leaving the rendered fat behind.
- 03Add the diced sweet potato to the hot skillet with the beef drippings. Cover the pan for 5 minutes to steam, then remove the lid and sauté for 8-10 minutes until tender and golden-brown.
- 04Stir in the Cajun seasoning, garlic powder, sea salt, and half of the black pepper, blooming the spices in the pan for 1 minute until fragrant.
- 05Return the cooked beef to the skillet and fold everything together. Add the chopped kale in handfuls, tossing for 2 minutes until just wilted and bright green.
- 06Garnish with the remaining black pepper and serve warm in a shallow bowl.
