Ingredients
- 68.6 g salmon fillet
- 1 tbsp sesame ginger marinade
- 0.25 tsp sesame seeds
- 48.5 g sweet potato
- 0.1481 tbsp extra virgin olive oil
- 116.4 g daikon kimchi
Method
- 01Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- 02Toss the small-cubed sweet potato with extra virgin olive oil and spread evenly on the baking sheet. Roast for 15 to 18 minutes until tender and caramelized at the edges.
- 03Coat the salmon fillet in the sesame ginger marinade. Heat a small non-stick pan over medium-high heat and sear the salmon for 2 to 3 minutes per side until opaque throughout, flaking easily, and reaching an internal temperature of 145°F (63°C).
- 04Transfer salmon to a board, let rest for 2 minutes, then slice into bite-sized cubes.
- 05Arrange roasted sweet potato cubes, sesame ginger salmon bites, and cold daikon kimchi side-by-side on a serving plate.
- 06Garnish salmon bites with sesame seeds and serve warm.
