Ingredients
  • 68.6 g salmon fillet
  • 1 tbsp sesame ginger marinade
  • 0.25 tsp sesame seeds
  • 48.5 g sweet potato
  • 0.1481 tbsp extra virgin olive oil
  • 116.4 g daikon kimchi
Method
  1. 01Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. 02Toss the small-cubed sweet potato with extra virgin olive oil and spread evenly on the baking sheet. Roast for 15 to 18 minutes until tender and caramelized at the edges.
  3. 03Coat the salmon fillet in the sesame ginger marinade. Heat a small non-stick pan over medium-high heat and sear the salmon for 2 to 3 minutes per side until opaque throughout, flaking easily, and reaching an internal temperature of 145°F (63°C).
  4. 04Transfer salmon to a board, let rest for 2 minutes, then slice into bite-sized cubes.
  5. 05Arrange roasted sweet potato cubes, sesame ginger salmon bites, and cold daikon kimchi side-by-side on a serving plate.
  6. 06Garnish salmon bites with sesame seeds and serve warm.
