- 73.4 g lentils
- 5 g extra-virgin olive oil
- 2 tbsp fresh flat-leaf parsley
- 0.125 tsp salt
- 2.2 g dried cranberries
Method
- 01Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- 02In a mixing bowl, combine the cooked quinoa, cooked brown lentils, finely chopped fresh parsley, and salt.
- 03Using a fork, mash about one-third of the mixture to create a cohesive paste that binds the ingredients.
- 04Form the mixture into 6 small, uniform spheres and place them on the prepared baking sheet.
- 05Lightly brush the exterior of each sphere with extra-virgin olive oil.
- 06Bake for 15 to 18 minutes until the bites are firm to the touch with a light golden crust.
- 07Remove from the oven and immediately press the finely chopped dried cranberries onto the top of each bite.
- 08Allow the bites to cool for 5 minutes to firm up before serving.
