Gochujang-Glazed Seitan with Sautéed Mustard Greens and Jasmine Rice

Ingredients
- 210.6 g seitan
- 50 g gochujang sauce
- 21.7 g jasmine rice
- 180 g mustard greens
- 18.4 g coconut oil
- 0.25 tsp salt
- 1 tbsp scallion
Method
- 01Rinse 70 g dry jasmine rice until the water runs clear. Combine with 140 ml water in a pot, bring to a boil, cover, and simmer for 18 minutes. Remove from heat and steam covered for 5 minutes.
- 02Cut the seitan into bite-sized cubes. Heat 10 g of coconut oil in a skillet over medium-high heat. Add seitan and sear until crisp and golden brown, 5-6 minutes.
- 03Pour in 50 g gochujang sauce and toss to thoroughly coat the seitan. Cook for 1-2 minutes until sticky and caramelized, then remove seitan from the pan.
- 04In the same skillet, add the remaining 8.4 g of coconut oil and the chopped mustard greens. Sauté over medium-high heat for 3-4 minutes until wilted. Season with salt.
- 05Scoop jasmine rice into a shallow bowl, place seitan and mustard greens alongside, and garnish with sliced scallion.
