  • 208.7 g black beans
  • 15 g fresh ginger
  • 29.3 g yellow onion
  • 5.8 g coconut oil
  • 1 pinch sea salt
  • 1.86 each egg
  • 1 tsp vinegar
Method
  1. 01Soak dried black beans in water overnight; drain, then simmer in fresh water for 45 minutes until tender. Drain well (yielding approximately 160g cooked beans).
  2. 02In a heavy-bottomed skillet, heat coconut oil over medium heat. Add diced onion and cook until soft and translucent, about 5 minutes.
  3. 03Stir in most of the minced fresh ginger (reserving a small pinch for garnish) and cook for 1 minute until fragrant.
  4. 04Add cooked black beans to the skillet, season with sea salt, and toss to coat. Cook for 3-4 minutes to develop a light crust.
  5. 05Bring a small pot of water to a gentle simmer, add vinegar, and carefully drop in the egg. Poach for 3 minutes until the egg white is fully set (reaching 160°F / 71°C) while the yolk remains soft and runny.
  6. 06Spoon the black bean and ginger hash into a bowl and top with the poached egg.
  7. 07Garnish with the reserved fresh minced ginger and extra sea salt. Serve hot.
