- 214.1 g sweet potato
- 39.5 g kale
- 42.8 g yellow onion
- 5.8 g Cajun seasoning
- 2 g olive oil
Method
- 01Heat the olive oil in a heavy-bottomed cast iron skillet over medium-high heat.
- 02Add the finely diced yellow onions and sauté until translucent and aromatic, about 3 minutes.
- 03Add the diced sweet potatoes to the skillet, stirring occasionally until they develop a light golden-brown crust and begin to soften, approximately 8-10 minutes.
- 04Push the sweet potatoes to the side and add the ground grass-fed beef. Season the entire skillet with the Cajun seasoning.
- 05Brown the beef thoroughly, breaking it up with a spoon, until cooked through and a food thermometer reads at least 160°F (71°C), about 5-6 minutes.
- 06Lower the heat to medium and fold in the chopped kale. Cover the skillet for 1-2 minutes until the kale is vibrant green and just wilted.
- 07Remove from heat, adjust seasoning if desired, and serve immediately.
