  • 180 g Ground Turkey, raw
  • 230 g Rice, white, long-grain, cooked
  • 120 g Squash, zucchini, baby, raw
  • 40 g Spinach, raw
  • 15 g Honey and Soy Glaze (Honey + Soy Sauce mix)
Method
  1. 01Prepare the aromatics by finely mincing 1 tablespoon of fresh ginger and 2 scallions.
  2. 02Heat a wok or large skillet over high heat. Add the ground turkey, breaking it up with a spatula until browned and slightly crispy, about 5-6 minutes.
  3. 03Add the sliced zucchini to the pan and stir-fry for 3 minutes until tender-crisp.
  4. 04Toss in the ginger and scallions, cooking until fragrant, about 30 seconds.
  5. 05Fold in the fresh spinach just until wilted.
  6. 06Pour in a mixture of soy sauce and honey (the glaze). Toss everything rapidly to coat the ingredients in the glossy, savory-sweet sauce.
  7. 07Serve immediately over a steaming bowl of fluffy white rice. Garnish with a final sprinkle of fresh scallion greens.
