Roasted Miso-Glazed Firm Tofu with Quinoa and Charred Broccoli

Ingredients
- 152 g firm tofu
- 11.7 g white miso paste
- 1 tbsp water
- 85 g quinoa
- 116.9 g broccoli
- 10.7 g olive oil
- 1 tsp lime juice
Method
- 01Preheat oven to 400°F (200°C). Press tofu with paper towels to drain excess moisture, then cut into 1-inch cubes.
- 02In a small bowl, whisk white miso paste with warm water until a thin glaze forms. Toss cubed tofu in glaze until evenly coated.
- 03In a saucepan, bring dry quinoa and water to a boil, cover, reduce heat, and simmer until cooked and tender; fluff with a fork before serving.
- 04Arrange glazed tofu and broccoli florets on a parchment-lined baking sheet. Drizzle broccoli with olive oil.
- 05Roast for 20-25 minutes, turning tofu halfway, until tofu edges are caramelized and deeply golden and broccoli tips are charred and tender.
- 06Assemble warm quinoa in a serving bowl, top with roasted tofu and charred broccoli, and finish with a squeeze of fresh lime juice.
