Ingredients
  • 1 tbsp olive oil
  • 1.75 cup sweet potato
  • 7.5 oz ground turkey
  • 0.75 cup green bell pepper
  • 2 clove garlic
  • 3 cup spinach
  • 0.5 tsp oregano
  • 0.5 tsp parsley
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp lemon juice
Method
  1. 01Heat 2 teaspoons of extra virgin olive oil in a large non-stick skillet over medium-high heat until shimmering.
  2. 02Add the diced sweet potatoes and cook, stirring occasionally, until browned on the outside and starting to soften, about 8 to 10 minutes.
  3. 03Push the sweet potatoes to the side of the skillet and add the remaining 1 teaspoon of olive oil along with the ground turkey and minced garlic.
  4. 04Break the ground turkey apart with a wooden spoon and sauté until fully browned, no longer pink, and reaching an internal temperature of 165°F (74°C) measured with a meat thermometer, about 6 to 7 minutes.
  5. 05Stir in the diced green bell pepper, dried oregano, dried parsley, salt, and black pepper, cooking for another 2 to 3 minutes until tender-crisp.
  6. 06Reduce heat to low, add the fresh spinach handful by handful, and gently fold into the mixture until wilted, about 1 to 2 minutes.
  7. 07Remove from heat, squeeze fresh lemon juice over the skillet, toss gently, and serve immediately.
