Mediterranean Ground Turkey and Sweet Potato Skillet with Wilted Spinach

Ingredients
- 1 tbsp olive oil
- 1.75 cup sweet potato
- 7.5 oz ground turkey
- 0.75 cup green bell pepper
- 2 clove garlic
- 3 cup spinach
- 0.5 tsp oregano
- 0.5 tsp parsley
- 0.5 tsp salt
- 0.25 tsp black pepper
- 1 tbsp lemon juice
Method
- 01Heat 2 teaspoons of extra virgin olive oil in a large non-stick skillet over medium-high heat until shimmering.
- 02Add the diced sweet potatoes and cook, stirring occasionally, until browned on the outside and starting to soften, about 8 to 10 minutes.
- 03Push the sweet potatoes to the side of the skillet and add the remaining 1 teaspoon of olive oil along with the ground turkey and minced garlic.
- 04Break the ground turkey apart with a wooden spoon and sauté until fully browned, no longer pink, and reaching an internal temperature of 165°F (74°C) measured with a meat thermometer, about 6 to 7 minutes.
- 05Stir in the diced green bell pepper, dried oregano, dried parsley, salt, and black pepper, cooking for another 2 to 3 minutes until tender-crisp.
- 06Reduce heat to low, add the fresh spinach handful by handful, and gently fold into the mixture until wilted, about 1 to 2 minutes.
- 07Remove from heat, squeeze fresh lemon juice over the skillet, toss gently, and serve immediately.
