Roasted Garlic and Herb Firm Tofu with Charred Broccoli and Brown Rice Bowl

Ingredients
- 75.7 g long-grain brown rice
- 0.75 cup water
- 138.5 g firm tofu
- 0.5 tsp dried oregano
- 150 g broccoli
- 10 g garlic
- 7 g olive oil
- 1 tsp lemon juice
- 0.5 tsp salt
- 0.25 tsp black pepper
Method
- 01Preheat oven to 400°F (200°C). Press firm tofu between paper towels to remove excess moisture, then cut into 1-inch cubes.
- 02In a saucepan, combine long-grain brown rice, water, and a pinch of salt. Bring to a boil, cover, lower heat, and simmer for 40-45 minutes until tender and water is absorbed.
- 03On a baking sheet, toss cubed tofu and broccoli florets with 5g olive oil, minced garlic, dried oregano, half the salt, and black pepper.
- 04Bake in the preheated oven for 25-30 minutes, turning halfway, until tofu edges are golden brown and broccoli florets are tender with charred edges.
- 05Fluff the cooked brown rice with a fork and place into a bowl. Top with the roasted garlic-herb tofu and charred broccoli.
- 06Drizzle with remaining 2g olive oil and fresh lemon juice before serving.
