Jiaozi with Ground Turkey and Chinese Chives

Ingredients
- 165 g ground turkey
- 61.2 g wheat flour
- 50 g chives
- 100 g Napa cabbage
- 1 tsp fresh ginger
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 0.25 tsp salt
- 25 g hoisin sauce
- 1 tsp Chinese black vinegar
Method
- 01In a bowl, mix wheat flour with approximately 40 ml warm water until a smooth dough forms. Knead for 5 minutes, cover, and let rest for 20 minutes.
- 02In a separate bowl, combine ground turkey, chopped Chinese chives, shredded Napa cabbage, minced ginger, half the soy sauce (7.5 g), sesame oil, and salt. Mix thoroughly in one direction until sticky.
- 03Divide dough into 10-12 equal pieces and roll each into a thin circular wrapper.
- 04Place a spoonful of filling in the center of each wrapper, fold over, and pleat the edges tightly to seal.
- 05Bring a large pot of water to a boil. Drop in dumplings and cook for 6-8 minutes, stirring gently. Ensure turkey is cooked through to an internal temperature of 160°F (71°C).
- 06Mix remaining soy sauce with hoisin sauce and Chinese black vinegar to make dipping sauce. Serve hot dumplings with dipping sauce.
