  • 4.0667 tsp coconut oil
  • 0.25 each yellow onion
  • 1 clove garlic
  • 1.5 tsp jerk seasoning
  • 1.0338 cup black beans
  • 1 cup okra
  • 0.25 tsp salt
  • 0.4557 each green plantain
Method
  1. 01Peel and slice the green plantain into 1-inch rounds. Bring a small pot of salted water to a boil, add the plantain slices, and boil for 15-20 minutes until fork-tender. Drain and keep warm.
  2. 02In a heavy-bottomed skillet, melt the coconut oil over medium-high heat until shimmering.
  3. 03Add the minced onion and minced garlic to the skillet and sauté for 3-4 minutes until translucent and fragrant.
  4. 04Stir in the jerk seasoning, letting it bloom in the hot oil for 30 seconds until highly aromatic.
  5. 05Add the prepared black beans and sliced okra to the skillet. Toss continuously to coat in the spices and sauté for 5-7 minutes, allowing the okra to soften and lose its raw texture.
  6. 06If the skillet begins to look dry, splash in 1 to 2 tablespoons of water to deglaze the pan and create a light spice coating.
  7. 07Season with salt to taste. Serve the jerk black beans and okra alongside the warm steamed plantains.
