Moroccan-Inspired Beef and Shiitake Tagine with Saffron-Infused Brown Rice

Ingredients
- 56 g long-grain brown rice
- 1 pinch saffron threads
- 0.5 cup water
- 0.25 tsp salt
- 250 g ground beef
- 200 g shiitake mushrooms
- 80 g yellow onion
- 15 g garlic
- 10 g extra-virgin olive oil
- 0.5 tsp ground cumin
- 0.5 tsp ground coriander
- 0.25 tsp ground cinnamon
- 1 dash cayenne pepper
- 1 tsp lemon juice
- 2 sprig fresh cilantro
- 1 pinch black pepper
Method
- 01Rinse long-grain brown rice under cold water. Combine with water, salt, and saffron threads in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 40-45 minutes until tender and fluffy.
- 02Heat extra-virgin olive oil in a heavy skillet or tagine base over medium-high heat. Add ground beef, breaking it up, and cook until browned and internal temperature reaches 160°F (71°C).
- 03Add minced onion and sauté until translucent, about 6 minutes. Fold in minced garlic and sliced shiitake mushrooms. Cook for 5 minutes until mushrooms soften.
- 04Season mixture with ground cumin, ground coriander, ground cinnamon, and cayenne pepper. Toast spices for 1 minute until fragrant.
- 05Reduce heat to low, add a splash of water, cover, and let flavors meld for 10 minutes as mushrooms braise in spiced juices.
- 06Fluff saffron brown rice with a fork and spoon into a serving bowl. Top with spiced beef and mushroom tagine. Garnish with fresh lemon juice, chopped fresh cilantro, and cracked black pepper.
