Ingredients
  • 56 g long-grain brown rice
  • 1 pinch saffron threads
  • 0.5 cup water
  • 0.25 tsp salt
  • 250 g ground beef
  • 200 g shiitake mushrooms
  • 80 g yellow onion
  • 15 g garlic
  • 10 g extra-virgin olive oil
  • 0.5 tsp ground cumin
  • 0.5 tsp ground coriander
  • 0.25 tsp ground cinnamon
  • 1 dash cayenne pepper
  • 1 tsp lemon juice
  • 2 sprig fresh cilantro
  • 1 pinch black pepper
Method
  1. 01Rinse long-grain brown rice under cold water. Combine with water, salt, and saffron threads in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 40-45 minutes until tender and fluffy.
  2. 02Heat extra-virgin olive oil in a heavy skillet or tagine base over medium-high heat. Add ground beef, breaking it up, and cook until browned and internal temperature reaches 160°F (71°C).
  3. 03Add minced onion and sauté until translucent, about 6 minutes. Fold in minced garlic and sliced shiitake mushrooms. Cook for 5 minutes until mushrooms soften.
  4. 04Season mixture with ground cumin, ground coriander, ground cinnamon, and cayenne pepper. Toast spices for 1 minute until fragrant.
  5. 05Reduce heat to low, add a splash of water, cover, and let flavors meld for 10 minutes as mushrooms braise in spiced juices.
  6. 06Fluff saffron brown rice with a fork and spoon into a serving bowl. Top with spiced beef and mushroom tagine. Garnish with fresh lemon juice, chopped fresh cilantro, and cracked black pepper.
