Ingredients
- 36.4 g 85% lean ground beef
- 284.7 g celeriac
- 5.5 g basmati rice
- 43 g Vidalia onion
- 1.1111 tsp extra-virgin olive oil
- 0.2833 tsp salt
- 0.125 tsp black pepper
- 1.1 tsp champagne vinegar
Method
- 01In a heavy skillet over medium-high heat, dry-brown the ground beef, breaking it up until caramelized and it reaches 160°F (71°C).
- 02Add the minced Vidalia onion to the pan and sauté until soft and translucent.
- 03Stir in the finely diced celeriac and a splash of water. Cover and steam for 3-5 minutes until tender, then fold in the cooked basmati rice, salt, and black pepper to combine.
- 04Allow the mixture to cool slightly, then firmly shape into small, bite-sized kibbeh patties.
- 05Heat the extra-virgin olive oil in a non-stick pan over medium heat and sear the patties until mahogany and crisp on all sides.
- 06Transfer the kibbeh bites to a plate and finish with a drizzle of champagne vinegar before serving.
